The Director of Stewarding is responsible to standardize, maintain, and continuously improve quality of culinary standards to guests' satisfaction. The Stewarding Director is responsible for the management of all aspects of the Stewarding Department functions, in accordance with hotel standards. S/he directs, implements and maintains a service and management philosophy, which serves as a guide to respective staff.

Essential Duties and Responsibilities

* Responsible for all F&B P-Card purchasing, F&B checkbook on supplies, CG&S and has the responsibility of updating the team, including the V.P., on a weekly basis regarding individual outlet charges.

* Responsible for all Capital Requests to including bids, ordering and monitoring of the product delivery and implementation/installation.

* Serves as the "go to" person for all capital needs.

* Monitors all costs of supplies including chemicals and arranges discount price breaks with Eco-lab and all supply vendors.

* Assumes delegated responsibilities given by the V.P. of F&B.

* Deals with facilities on a daily basis to ensure proper bids are received, equipment is repaired and new installations are completed.

* Maintains complete knowledge of and complies with all departmental policies/service procedures/standards.

* Maintains complete knowledge of correct maintenance and use of equipment.

* Anticipate guests needs, responds promptly and acknowledges all guests, however busy and whatever time of day.

* Monitors and maintains cleanliness, sanitation and organization of assigned work areas.

* Maintains complete knowledge of: a) Anticipated business levels in each outlet per meal period. b) Daily house count. c) Scheduled in-house group activities, locations and times. d) Correct chemical handling procedures.

* Inspects all work areas and documents discrepancies to be rectified.

* Develops action plan if needed.

* Inspects quality of work performed by night Cleaners and resolves deficiencies.

* Ensures scheduled cleaning tasks are completed within specified time frames.

* Meets with the Executive Chef and reviews the kitchen needs daily.

* Maintains close communication with F&B Managers, working to supply their equipment needs.

* Reviews kitchen and restaurant service needs from F & B Managers and Stewarding throughout the shift and ensures that all requirements are met according to specifications.

* Accommodates expediently and courteously all requests for additional wares.

* Follows up on delivery of all such items.

* Reviews B.E.O.'s at daily meeting and resolve discrepancies.

* Prepares equipment set-up sheets and ensure follow through on banquet support needs required from Stewarding.

* Completes requisitions to replenish shortages or additional items needed for the anticipated business. Instructs designated personnel to rectify any cleanliness/organization deficiencies.

* Ensures that all items are stored in accordance with state/local health and fire departments regulations and according to hotel requirements.

* Establishes cleaning schedule for all tasks to be completed on a daily/weekly/monthly/quarterly basis, ensuring that all areas are routinely cleaned.

* Develops checklists for employees to follow when completing scheduled cleaning tasks.

* Establishes and monitors compliance with recycling/conservation specifications.

* Establishes and reviews labor costs, chemical cost per cover, daily expenses and breakage; resolves discrepancies with Accounting.

* Monitors weekly work schedules in accordance with staffing guidelines and labor forecasts.

* Identifies situations, which compromise the department's standards and delegate these tasks.

* Conducts pre-shift meeting with management staff and review all information pertinent to the day's business. Inspects, plans and ensures that all materials and equipment are in complete readiness for service; rectification of deficiencies with respective personnel.

* Monitors all work areas for compliance with health regulations and follows through on any violation.

* Monitors and ensures that all temperature and chemical solution requirements are met with regard to dishwashing, potwashing and storage.

* Assists Stewarding Staff with their job functions where needed to ensure optimum cleanliness and service standards.

* Monitors and ensures that Stewarding staff follows safety practices.

* Establishes a preventative maintenance program for all machinery and maintain accurate records of such.

* Ensures all closing duties for management staff are completed before staff signs out.

* Fosters and promotes a cooperative working climate, maximizing productivity and employee morale.

* Has positive and professional interaction with all casino/hotel departments.

* Consistently demonstrates excellent communication and facilitation skills.

* Assists co-workers as needed.

* Proficient in Microsoft Word, Excel, Power Point and Outlook E-mail programs.

* Additional duties as requested by the Operations Manager.
