At the helm of Rancho Bernardo Inn's renowned food and beverage programs is Executive Chef Travis Watson. The Inn's signature restaurant, AVANT, has been named one of the city's top-10 by San Diego Magazine and focuses on unpretentious, approachable cuisine with homegrown culinary touches paired with handcrafted classic cocktails, local craft beer and limited production wines from around the world.

AVANT has an exciting opportunity for an experienced Chef de Cuisine To supervise AVANT cooks and to ensure the quality of preparation and presentation of all menu items.

ESSENTIAL DUTIES:

  • To supervise kitchen shift operations and ensure compliance with all Food & Beverage policies, standards and procedures.
  • To assist the Executive Chef with all kitchen operations.
  • To perform all duties of kitchen managers and associates as necessary.
  • To recognize superior quality products, presentations and flavor.
  • To assist the Executive Chef in developing and generating annual sales for the restaurant.

JOB KNOWLEDGE & EDUCATIONAL LEVEL:

  • High school diploma or equivalent required; Bachelor's Degree preferred.
  • Culinary Education preferred. Certifications, as required to comply with local and state laws.
  • English fluency required; Spanish language ability helpful.
  • Must have minimum four years of experience in operating a signature high volume restaurant.
  • Must have Food and Beverage and culinary management experience with demonstrated leadership.
  • Familiar with OSHA, SB198, local Department of Health regulations, and relevant current laws governing handling of hazardous substances.
  • Hotel experience preferred.
